How to make Channa-Murki?
Sugar is dissolved in water and the mixture is boiled until it becomes a 3 string consistency. 4 tablespoonfuls of milk is added to it to clear the sugar solution of suspended dirt, etc.
The channa pieces are cut into small cubes and placed into the prepared sugar syrup in a karahi. The mixture is boiled for 5 minutes, stirring gently to ensure that the cubes do not break.
The karahi is removed from the fire and the contents are allowed to cool. The cubes are stirred further till the entire sugar is uniformly coated around them. When cooled, it may be sprinkled with flavour Kewra on it. If desired, it may be served multi- coloured and decorated with dry nut flakes. Channa-murki is ready to serve.
