How to make panir masala?
Oil is added to the frying pan on the fire. When the boiling temperature is reached, mustard seed is added to the hot oil. It is followed by adding chopped onions and it is fried until it becomes golden brown in colour. Then chopped tomatoes are added and fried for some time. Then ginger-garlic paste,
green chillies, curry and coriander leaves, chilly powder and salt are added one by one and mixed and fried well.
When the masala is forming into a homogeneous mass, just two minutes before it has to be removed from the fire, small pieces of paneer are added to the masala and fried well. Care has to be exercised not to overcook the paneer as it would become plastic like in consistency and lack taste. After proper cooking, the masala is removed from the fire and it is now ready to serve. The paneer masala can be used as a side dish for chapathi and dosa.
